The head chef at Restaurant 579 on Olive (Mercure Albury) has been perfecting the art of sourdough since he started his culinary career on the Border.
He said he was obsessed with bread; oftentimes getting lost in the research late into the night.
"The process behind making a good loaf of bread is really phenomenal," he said.
"When you understand the process, it really gives you a lot of satisfaction."
Growing up on the Border, Motton said his great grandparents and grandparents encouraged him to bake.
"When I started hospitality at school, I always made the dinner rolls for events," Motton said.
Having trained at The Bended Elbow and Albury Manor House, Motton started at Restaurant 579 on Olive almost 12 months ago.
He said the menu was inspired by local produce.
"If we can't get it locally, we make it ourselves," he said.
Housemade bread under the Bread Chef label will be available to order in the near future.

What is your favourite dish?
Anything based around bread. Bread is the basis of every good meal.
What is your favourite season?
Summer. When it warms up, it's easier to proof bread.
What are the staples in your pantry?
Good quality flour and good quality salt like Murray River pink salt.
What is your earliest cooking memory?
Making hedgehog slice with my great grandmother. She was massively into cooking. She travelled around the world with my great grandfather and she would recreate different dishes.
Which ingredients do you grow yourself?
I prefer to leave it to our passionate growers of local produce.

Great grandparents Fred and Lorrice Thompson, partner Maddie Morrison, sous-chef Jake Domaille and my grandparents Michelle and Stuart Packham.
What is a favourite foodie ritual?
My partner and I travel somewhere new locally on Sundays for lunch or dinner.

Only YouTube for food videos especially bread.

Pizza at Bridge Road Brewers.
