Homegrown Chef | Taste Trekkers founder Sally Lynch is on board for the debut Opera Feast

BEECHWORTH chef Sally Lynch is busy planning, prepping and pickling as she rolls out a range of delicious foodie events in the coming weeks.
The founder of Taste Trekkers, whose kitchen and cookery school is based at the Old Beechworth Gaol, said the inaugural Opera Feast on March 14 would be a highlight.
Lynch said the four-course meal ahead of Opera in the Alps would include a canape and Italian dessert chosen by Italian soprano and chef Silvia Colloca, well-known to SBS viewers for Made in Italy and Cook Like An Italian.
"There will be a smashed broad bean and mint crostini as well as a cocoa pavlova, which merges Australian and Italian cuisine," she said.
Lynch will team up with Scion Wines at Tastes of Rutherglen this weekend.
She will prepare a range of local produce-inspired dishes including vegetarian options matched to Scion wines.
Lynch also plans a Johnny Cash-themed event in her own The Big House Cooking School at the Old Beechworth Gaol as part of Feast High Country.

When my place got flooded in Brisbane and I lost all of the food, the first thing I went out and bought was fish sauce! I also have olive oil, salt, a few different types of pepper and good pasta.

Cooking cakes with Mum on the farm at Peechelba.
Which ingredients do you grow yourself?
Tomatoes, basil, Thai basil, Vietnamese mint, sage, parsley and a rocket patch.
Name six people you'd invite to a dinner party.
Anthony Bourdain, Bette Midler, Yotam Ottolenghi, Elon Musk (I think he would be mad!), Richard Branson and my friend Ginge as we would laugh our heads off!
What is a favourite foodie ritual?
It's preserving stuff. Like pickling plums and dehydrating oranges.
What are you bingeing on TV? If anything.
Animal Kingdom and Salt, Fat, Acid, Heat
What did you have for dinner last night?
Zucchini cooked with turmeric and ginger and garlic with poached chicken.
What are you drinking at the moment?
Gin. I'm obsessed with Four Pillars Sherry Gin; it has a beautiful sherry sweetness just with soda.
