Restaurateur Barry Iddles, who operates Elk Restaurant and Cocktail Bar at Falls Creek, will cater for about 100 racegoers in the birdcage at the annual picnic races on Saturday.
Iddles said after a successful birdcage debut last year, he would bring it back again.
"I love country race meetings, it's fantastic to be able to bring the birdcage style and class to Dederang," he said.
"A lavish marquee with fresh flowers, strapping wait staff, a stunning buffet lunch of king prawns, chicken and eye fillet, salads and free-flowing bubbles, beers and wines, will add another element to the Dederang Race Club's largest fundraiser for the local sporting and community clubs."

Dederang Races management committee member Amy van de Ven welcomed it.
"With the change of date to March 14 (from early January) we understand we are potentially targeting a new market of racegoers."
