Serves 4
Base
- 200g wild quinoa
- 100ml coconut milk
- 50g honey
- 200ml water
- 125g buckwheat
- 15g chia seeds
Additional ingredients
200g coconut yoghurt
Fresh mixed berries
30g toasted and chopped almonds
Toasted coconut flakes
20g toasted pumpkin seeds
20g toasted sunflower seeds
Method
Base
In a medium pot place all ingredients apart from the chia seeds. Cover and cook until quinoa has absorbed all the liquid. Transfer to a large bowl, add chia seeds and cool overnight or until cold.
Assemble
Stir through the almonds, pumpkin and sunflower seeds.
In a glass or cup container, layer mixed berries, coconut flakes, coconut yoghurt and base.
