The man walked into Wang's Best Bakery in Vincent Road about 8am on Monday. The fake weapon, which had a scope and magazine and appeared to be real, was clearly visible in his bag.
The 34-year-old did not make any threats and was told to leave, with staff and the public nervous during the incident.
The man left and walked down Vincent Road, past a newsagents.
The imitation weapon has been recovered but the man is yet to be spoken to.
"If anyone saw a male between 8am and 8.30am in the Vincent Road area, please contact police," Sergeant Damian Loiterton said.
"The behaviour is unacceptable, especially in the current environment, for someone to walk into a bakery with a weapon whether it's pretend or real.
"It has the appearance of a real rifle."
