Athanitis recently informed Cats officials of his decision after two years at the helm.
The 34-year-old was co-coach alongside Damien Wilson last year and was set to coach outright this season.
The Cats finished seventh last year with a competitive 8-10 record.
Athanitis cited his inability to attract recruits over the summer as one of the major reasons that led to his decision.
"I thought we were competitive last year considering the list we had," Athanitis said.
"But we probably need four or five recruits to take the next step and play finals.
"It's a tough gig recruiting at the moment because I live in Walbundrie and am not allowed to cross the river into Rutherglen.
"So it is a bit of logistic nightmare to be able to do all the work that is necessary involving recruiting.
"I just thought it was a good opportunity for the club to find another coach that will be able to drag a few players with him."

Athanitis boasts a successful coaching record which began at Rand-Walbundrie in 2013.
He led Rand-Walbundrie to the grand final in 2014 during his three-year stint from 2013-15.
The talented cricketer also spent time at the helm of CSU Bushpigs in the Farrer league from 2016-17.
He and Josh Owen co-coached Milawa into the Ovens and King league grand final in 2018.
"I've coached for eight-years straight if you include this season," he said.
"So I've sort of exhausted all my contacts recruiting-wise over the years.
"That's the reality of it."
Athanitis said it was an exciting opportunity for a potential coach who had the ability to recruit.
"The club is very strong off the field," he said.
"They are a great footy club with good leadership.
"President Greg Lumby has provided me with strong support and has been brilliant to deal with.
"But it is hard yakka in Victoria at the moment with all the restrictions and you basically can't do anything if you want to meet with potential recruits."
Beechworth are also on the lookout for a new coach after co-coaches Brenton Surrey and Jay Dale recently stepped down without coaching a match.
