The North East's only two-hatted establishment introduced a wine bar format in January post-bushfire crisis, an online Provenance Grocer amid the coronavirus national lockdown and now bento box courtyard dining over summer to complement the restaurant trade.
Provenance owner and executive chef Michael Ryan said restaurants had to be more prescriptive this year.
"In between lockdown number one and lockdown number two, we were never busier," he said.
"But we felt the impact of the border closure, losing important markets in Wagga and Canberra."
Having featured in Adam Liaw's Roadtrip for Good, Ryan said he hoped the upcoming series would remind diners to support the regions.
"We do need a national profile; you can't rely only on local trade," Ryan said.

Liaw said 2020 had been tough for everyone but particularly regional Australia.
"Before COVID, there were bushfires and before bushfires there was drought," he said.
"Adam Liaw's Roadtrip for Good is about telling their stories and reminding people what's great about regional Australia.
