Miss Amelie Gourmet now has a new pop-up shop in Albury on top of two sites at Wagga and the Wodonga headquarters.
Miss Amelie Gourmet co-owner David Kapay said he was committed to having a permanent presence in Albury.
He said they hoped to sign a seven-year lease by early next year.
"We're committed to increasing our lunch-time trade with a long-term presence in Albury," he said.
Having opened two sites at Wagga over spring, Mr Kapay said the Albury pop-up shop only came on the radar after the border closure and masks were made mandatory in Victoria.
He said the first day's trade last Thursday augured well for the business.
"It's the best day we've had so far," he said.
"We've got eight chefs working for Miss Amelie Gourmet in Wodonga so we need to get the most bang for our buck."

The business employs 12 staff in Wodonga with another five at Wagga.
Mr Kapay said they still planned to secure a premises in Canberra.
"We're in early discussions with Canberra to get something set up there," Mr Kapay said.
He added Little Miss wine bar to the restaurant foyer during May 2018.
Kapay trained in hospitality on the Border before he headed to England to work in high-end restaurants owned by celebrity chefs Jamie Oliver and Gordon Ramsay.
The Albury Miss Amelie Gourmet pop-up shop, which is in Myer Centrepoint opposite Woolworths, operates seven days.
