District Dining Bar and Grill launched seven regionally-inspired cocktails this month.

Among the new drinks are Billson's Spiced Apple Twist, Murray Valley Margarita and Corowa Chocolate Mint Slice.

Mantra Albury general manager Ian Muller said the new cocktails list complemented the restaurant's approach to food.

"We've got a philosophy of supporting local producers and we are expanding that all of the time," he said.

"In the cocktails we're using local ingredients like Billson's cordials and their dry gin, Beechworth Honey, Bright Berries and Murray River Salt."

Mr Muller said the new autumn menu featured about a dozen local producers as well as regional wines and craft beer.

"We've got beautiful quality produce that is second to none," he said.

"Firstly, the philosophy is that everything's local; it's about showcasing the best of what the region has to offer.

"Secondly, there is an overarching aim of reconnecting diners with the region."

It is the third new menu since District Dining Bar and Grill launched in Mantra Albury on Smollett Street in early November.

District Dining Bar and Grill head chef James Burge, who was Albury-born-and-bred, said the modern Riverina-inspired menu tapped into the broader story of the region.

Burge said the new menu featured pastured chicken from Thurgoona regenerative farmers Wolki Farms.

"It's been years since I've got my hands on pastured chicken like it," he said.

"It has such a different texture and flavour from spending more time on grass."

Burge said yabbies had been very popular on their previous menus.

"Now yabbies are out of season, we're using scampi," Burge said.

"The quality is incredible."

District Dining Bar and Grill offers Happy Hour on weekdays between 5pm and 6pm.
