Charanjit and Ramandeep Bhullar will open Authentic Taste of India on Dean Street on Thursday night.
Mr Bhullar said their long-held dream to open a restaurant had come together since November.
He said they had rebuilt the commercial kitchen and fitted out the restaurant to seat 80 people under present restrictions.
"We're confident about the future of hospitality and people are very excited to be able to dine out," he said.
"It's always been our dream to have an Indian restaurant."
Mrs Bhullar said the menu focused on authentic fare from northern India, where the couple grew up before moving to Melbourne.
Having lived in Albury since 2012, they now have two children, aged 11 and 7.
"It's food from northern India, which is an actual taste of India," Mrs Bhullar said.
"We're just putting our own spin on it."
The couple also run Murray Indian Groceries in North Albury and Birallee Cafe in Wodonga.
IN OTHER NEWS:
Mr Bhullar said the specialty grocery store had been busy, particularly during the coronavirus pandemic.
"We stayed open throughout COVID because we're an essential service; we had a lot of local support for our business over the past few months," Mr Bhullar said.
Having worked hard to achieve their goals in multiple ventures, Mrs Bhullar said they were excited to offer Albury a new restaurant.
"With so many people selling businesses, we're starting a new one and opening a new door in Albury," Mrs Bhullar said.
Mr Bhullar said the restaurant would serve alcohol when they gained their liquor licence soon.
They have a wide range of soft drinks and alcohol-free drinks available for now.
Authentic Taste of India, which is next door to Regent Cinemas Albury Wodonga, will offer dinner seven nights, 5pm to 10pm, lunch from Thursday to Sunday, 11am to 2pm, and a takeaway service.
Indian buffets will return to the menu offerings when COVID-19 restrictions allow it.
