His mum's cooking paid homage to the fresh ingredients plentiful in the countryside.
"Growing up with that traditional food in a village north of Hanoi, I always knew I wanted to be a chef," he said.
When he moved to Australia as an 18-year-old to train in the automotive industry, Eric still hungered to become a chef.
He made the switch to hospitality in Melbourne eight years ago before moving to Albury a year ago with his wife Sophia under RDA - Murray sponsorship.
On Monday the couple opened a Vietnamese street food truck in the heart of North Albury, opposite Northside Hotel.
Rolls on Border offers authentic Banh Mi (Vietnamese baguette), Goi Cuon (rice paper rolls) and Bun (noodle salad bowls).
"We wanted to bring Vietnamese cuisine to the Border," Eric said.
"When we moved here we saw no one else was doing traditional Vietnamese street food in Albury or Wodonga.
"It's healthy food that people are looking for."

Having worked for Sodens Hotel and Andiamo Street Food for the past year, respectively, Eric and Sophia, were excited to share their take on traditional Vietnamese cuisine.
"We've had great feedback from customers," Sophia said.
"Last week we did deliveries as a trial and we had to stop taking orders because there were so many.
"Yesterday we closed early because we ran out of stock.
"People are very excited to be able to order Vietnamese street food in Albury."
Eric, who also works at Jappo Donks in Wodonga, said they planned to operate their food truck south of the border soon too.
"We want to do two days a week in Hovell Street, Wodonga," he said.
"We always wanted to do something to give back to the region that has given us so much.
"We want the community to enjoy our food."
Rolls on Border, which is located at 510 Union Road, opens on Monday and Tuesday between 10am and 3pm.
