Jason Michael Hyatt represented himself on a series of charges in Albury Local Court as the officers stood around the dock.
He allegedly spat on a police officer and a Corrective Services officer when refused bail at the weekend.
He made an application for bail after police prosecutor Sgt Chris Adams explained the reason for the face mask.
Hyatt claimed he has been assaulted by a police officer and Corrective Services officer and said: “I have done nothing wrong”.
Magistrate Geoff Hiatt refused bail and adjourned charges against Hyatt until October 12 after ordering the preparation of a police brief of evidence.
Hyatt, 28, of Fleming Drive, Corowa, has been charged with assault occasioning actual bodily harm, contravening an apprehended violence order, possessing a prohibited drug, custody of a knife, intimidating police, malicious damage, intimidation and assaulting police.
The court was told he had been in a de facto relationship for 12 years and they have four daughters.
A 12-month apprehended violence order was granted on July 7 to his de facto.
Hyatt argued with her about 4pm on Friday and refused her request to leave their residence before hitting her with a backhander to the left eye area, then chased her making a death threat.
Police attended and found Hyatt with 12g of cannabis hidden in his pants and a 22cm fold-out knife.
“I always carry it for protection,” he told police.
He threatened a police officer before putting his fingers down his throat forcing himself to vomit in a dock at the Corowa police station and urinated in it.
He was moved so the mess could be cleaned up and later spat in an officer’s face.
He was remanded in custody on Saturday and spat in a Corrective Services officer’s face.
Ambulance officers who attended to check a self-inflicted wound on Hyatt flushed out the officer’s eyes.
Hyatt earlier this year received a two-month jail term for assaulting the same victim and said: “I don’t want to go back to jail”.
