The Rib Cage restaurant opened during August in Dean Street in the building formerly occupied by The Paleo Cafe.
The restaurant owner and chef David Evans said Border diners had embraced the authentic style of American barbecue.
“Clearly there was a gap in the market for something new to Albury,” Evans said.
“It’s not too fancy or too fussy; it’s good honest food.”
The Rib Cage serves real BBQ cooked with smoke; hickory, mesquite and applewood are used to smoke, roast and chargrill locally sourced ingredients until they are tender and succulent.
Having worked on the Border since 2006, Evans said he developed a taste for American BBQ when he lived in Canada and travelled around the US a decade ago.
“Ever since I lived in Canada I try to get back to the States each year; the first thing I do is hunt out an American BBQ restaurant,” he said.
“There is nothing else like it.”
Evans imported a Smoker oven and woodfired chargrill to replicate the authentic flavours of the Deep South.
All of the handmade sauces on the menu come from traditional recipes.
“The tomato sauce is a family recipe and the other sauces have been researched; they’re all authentic,” he said.
Patrons are given complimentary peanuts on arrival but – unlike in the US – they’re not encouraged to throw their shells on the floor.
