Elkington-Jones, who is coached by former Olympian Nicole Boegman-Stewart at Homebush, has been named in a 44-member track and field team.
Australian Paralympic chef de mission Kate McLoughlin said she was excited by the talent.
“Australia has a rich history in Paralympic athletics,” McLoughlin said.
“We’ve won more than 350 medals since the sport was introduced at the first Paralympic Games in 1960.
“And if the Australian Paralympic team is to finish in the top five on the medal tally in Rio, it will be this group who will largely determine whether we achieve that goal.”
Elkington, 23, won gold in the long jump at the 2014 Commonwealth Games in Glasgow.
Four-time Paralympian Kurt Fearnley will co-captain the Australian team.
The Rio Paralympic Games run from September 7 to 18.
