Sarah and Matt King opened their eatery The Ten Mile in April in the premises, which was originally home to Germanton Motors and later a bike shop and Tyrepower.
With a background as a chef in Australia and London, Ms King wanted a new base for her catering business, Food by Sarah King.
“I needed to get the catering business out of the house,” she quipped.
“We took a leap of faith in Holbrook and decided to just do it.”
Mr and Ms King, who have two children Olivia, 11, and Wil, 9, wanted to preserve the integrity of the historic building in their six-month renovation.
Ms King said repurposed farmhouse tables complemented the menu.
“It’s simple food done well; I don’t want to overcomplicate it,” she said.
“We have a seasonal menu that features local producers like Holbrook Paddock Eggs, The Bicycle Baker, Holbrook Bakery, Butt’s Gourmet Smokehouse and Holbrook Quality Meats.”
The Ten Mile uses Mansfield Coffee Merchant beans.
Pop-up homewares store The Holding Yard shares the space.
What's your winter autumn dish?
Slow-cooked beef cheeks with parsnips.
What's your favourite season?
Autumn. Slow-cooked food is a real passion.
What are the staples in your pantry now?
Sriracha Chilli Sauce, lamb, butter, salt, cream, fats. I only use animal fats and olive oil; I don't use any seed or plant oils.
What is your earliest cooking memory?
I grew up on a farm in South Australia. I remember mum cooked in camp ovens on the woodstove. All sorts of stews, which I probably didn't appreciate at the time!
Which ingredients do you grow yourself?
We will have a veggie garden here in time. We have Suffolk Hampshire sheep on the farm.
Which six people would you invite to dinner?
Maggie Beer, Christine Manfield, Suzie Quatro, Nelson Mandela and both of my grandmothers.
What are you bingeing on TV? If anything.
I haven't had much time for TV. But if I did it would be a reno show.
What did you have for dinner last night?
I had chicken, mushroom and bacon pasta; very kid-friendly.
What are you drinking at the moment?
Lattes at work and a gin after work with a good amount of lime and tonic.
