An accountant by day, she loves nothing more than to get to work in the kitchen in the evening.
But there’s a special ingredient that Nadine likes to add to her cooking routine — having her friends around.
“I just love entertaining,” she said.
“I love cooking and having dinner parties.
"Having dinner parties at home, it's pretty relaxed and you don't have a curfew or anything like that.
“You can just do what you want and everyone enjoys themselves, I think, the pressure's off.
“I love catching up with my friends and I love cooking, so it's no drama for me to do it.”
These dinner parties are usually Thai or Indian inspired.
“The last one we had an around-the-world theme, everyone brought a dish from a different country,” she said.
“Everyone's busy, so have a dinner party and everyone kind of makes it.”
Originally from Barnawartha, Nadine moved away from the Border for a few years for work before returning to Wodonga.
Cooking provides a welcome contrast to her day job.
"I really enjoy it, it's a bit of a down time kind of thing," she said.
She gathers her recipes mostly through online searches these days although she still owns a collection of good cookbooks.
Nadine said she preferred to stick to recipes rather than improvise.
"I don't want to cook something that's not going to taste nice for my guests," she said.
Quality equipment is essential in her kitchen.
“A good sharp knife is a must, otherwise it’s just frustrating and dangerous,” she said.
And her new favourite kitchen tool is her pasta maker, bought on special while away one weekend.
“I'm a lover of pasta," Nadine said.
"I had been wanting to do it for ages.
“I just hadn't got around to getting one.
“The opportunity presented, so I took it.
With the help of her partner Matt Rhook, Nadine has created a fettuccine and a three cheese ravioli with their new acquisition.
“It’s so simple to make pasta,” she said.
“I didn’t realise.”
But nothing compares with this Thai favourite, which is often requested by her friends.
