Operator Tim Tehan, who grew up on a Holbrook farm, has returned to his roots to run the Albury eatery, which opened on October 26.
“There’s a modern Australian approach to cuisine which has Mediterranean influences with a French-bistro feel,” he said.
Highlights include a creative breakfast menu, all-day brunch offerings and tasty snack plates to share ahead of dinner.
Popular dishes include grilled kippers with horseradish butter, poached eggs and spring leaves and a classic Brooklyn bagel with cream cheese, salmon, avocado and pickled cucumber.
Canvas Eatery is open seven days from 8am.
