Swedish saffron buns, German stollen and Danish pepper biscuits are among the changing line-up of baked goods at the South Albury premises in December.
Owners Thor Sonnichsen and Filippa Nillson, who opened the speciality bakery in Ebden Street in May, offer traditional delicacies inspired by northern European countries.
Swedish-born Ms Nillson said Scandinavian Christmas baked goods paired well with coffee or as part of a festive celebration.
“A lot of people on the Border like traditional European-style food,” she said.
Mr Sonnichsen makes Swedish lussekatt – a spiced yeast-leavened sweet bun – flavoured with Peechelba Produce saffron.
“Peechelba Produce saffron is local and chemical-free; we use organic whenever possible,” he said.
Mr Sonnichsen and Ms Nillson, who celebrated Christmas in Albury during 2013 and 2014, will spend the holidays in Sweden this year.
Mr Sonnichsen, who was born in Denmark and raised in Thurgoona, will experience his first Christmas in Sweden. His brother Kaj will join them in Filippa’s hometown on Oland.
“There will be a smorgasbord with hot and cold sides, smoked eel, slow-cooked ribs and pork dishes,” Ms Nillson said.
Mr Sonnichsen said mulled wine would be on the menu in Sweden: “I got two (mulled wine) seasons this year.”
Nord Bakery closes for a break on December 19 and reopens, fittingly, around Australia Day 2016.
