Albury’s Geoffrey Michael Patissier is renowned for his creative twists on classics.
His popular Geoffnuts – a croissant doughnut – tapped into Gaytime and Buffalo Bill themes in 2015.
“I’m always trying to push the envelope and try something new,” he said.
Geoffrey said he expected food trends in 2016 to include deconstructed sweet treats, lemon meringue doughnuts and eclairs.
