Mr Quick moved to Holbrook 18 months ago and established a target shooting equipment importing business from the town's former CBC Bank building.
He has nominated for a spot in council's east ward and will go up against present mayor Heather Wilton, Cr Stuart Heriot, Cr Tony Quinn and Kim Stewart from Burrumbuttock.
Mr Quick represented Australia at the Athens and Beijing Olympics before missing out on the team for Rio.
He has also represented Australia at six Commonwealth Games and won a bronze medal at the 2010 Delhi Games in the rapid fire pistol pairs with partner David Chapman.
"Holbrook offered the option of living and running a business from home," Mr Quick said.
"I've always wanted to contribute to the community in some way.
"Seeing the changes the town has undergone since the bypass, I'm keen to try and be a positive force and represent the people of Holbrook.
"I want to see Holbrook turn into more of a destination rather somewhere you go through.
"I wouldn't have moved to Holbrook if it was still part of the Hume Highway."
Mr Quick is formerly from Shepparton and is a qualified nuclear medicine technologist.
Cr Wilton has been Greater Hume mayor for the entire term of the present council after previously being the mayor of the former Holbrook and Berrigan shires.
Cr Heriot, a farmer at Morven, was previously elected in the north ward, but is contesting east ward.
Deputy mayor Doug Meyer and Cr Annette Schilg are facing competition from Culcairn duo Terry Weston and Jenni Turner and Henty's Peter Knight in north ward.
South ward councillors Denise Osborne, Karen Schoff and Jenny O'Neill have one other challenger, Matthew Hicks.
