The Beechworth-based emergency care nurse started Three Mile Kitchen earlier this year.
Having moved to Beechworth from Melbourne with partner Steve North in late 2014, Ms Moreland said they had considered a food venture for years.
She said they had focused on bagels, croissants and pastries.
“I make morning buns – croissant dough with brown sugar, orange and cinnamon – a type of cruffin (croissant and muffin hybrid),” she said.
While her mum was a great cook, Ms Moreland said she was simply drawn to good food.
“I think just being a bit of a greedy person myself, I always pushed towards food – making it, eating it or growing it ourselves,” she quips.
Three Mile Kitchen produce is available at Beechworth Farmers’ Market (first Saturday of the month) and Myrtleford Farmers’ Market (fourth Saturday of the month) as well as Beechworth Food Co-op.
What's your favourite dish?
Pho (Vietnamese noodle soup with rare beef)
What are the staples in your pantry?
Bright Chocolate (for us and in baking); tinned beans and pasta; homemade preserves like pickled jalapenos and jam; butter.
What's the biggest product discovery you have made in cooking?
Butter sheets. I was pounding butter into flat sheets until I found King Valley Dairy had quality pre-made butter sheets.
What's your secret vice?
Cheese. I could eat my body weight in Comte (French cheese made from unpasteurised cow's milk in the Franche-Comte region).
What is your recipe standby?
Dark Chocolate Brownie. If I’m on night shift I will take a batch of brownies; it keeps everyone pepped up.
What is your most unforgettable meal and where?
During a farm stay in San Gimignano in Tuscany. On the first night we were given wild caught rabbit braised in milk and lemon with fresh potatoes from their garden and their own wine.
What's your favourite cooking utensil?
Spatula
What's in your kitchen toolkit?
A good rolling pin, digital scales and an ice blanket.
What did you have for dinner last night?
We went to gastropub Empire Hotel Beechworth and I had spatchcock with cauliflower hummus. It was delicious.
