It's been a labour of love for the Bonegilla-based farmer.
Even after all this time though, he's grateful to the people who have given him the chance to set up his long-running stall.
“It becomes such a part of your life, a Sunday ritual,” Mr Dare said.
“You start two or three days beforehand to get everything ready.”
There'll be a new look to the markets this weekend, as they return to the Kiewa Street carpark after four years away, due to construction works.
With specially designed facilities on hand for the markets, Mr Dare said he was anticipating a busy morning.
“It's always interesting when you start in a new venue,” he said.
“We're just heading into the busy time of the year for us with the amount of produce we've got, it's a bit full-on.
“There's almost some adrenaline with the amount of people there.
“It's all happening – after 11 or so you can get through the busy part, have a coffee and take a breath.
“It can get a bit exciting at times.”
Rotary's Peter Drummond said they were expecting one of their biggest markets in recent memory, with more than 150 stallholders expected.
“We're confident the markets will make a bit of a resurgence,” he said.
“The plan is to double the turnover from the market, we're expecting to get a lot more stalls as we go ahead.”
Stalls will open from 9am on Sunday.
