Corowa sportspeople Jack Schilg and Georgie Schulz took over Doc Yarrum Cafe (Murray cod backwards) in Sanger Street late last year.
The Corowa-Rutherglen Football Club senior player and former A Grade netballer, Jack and Georgie, both 19, have applied their sound work ethic and health-conscious approach to their first joint business.
“We’ve always been keen on doing something in food but we didn’t expect the chance to come around this quick,” Jack said.
A former personal trainer at Adrenaline Boxing and Conditioning in Albury, Georgie works the coffee machine while Jack is head chef.
Jack said they offered comfort food staples and health-conscious dishes.
“I’ve always been interested in health and food,” he said.
“I used to cook a lot at home; I was cooking dinner by the time I was 14 or 15.”
Asked whether he preferred the pressure of the game to the heat of the kitchen, Jack said he was happy in both realms.
“Cooking helps take my mind off footy before a game!” he said.
They serve Brewhouse Coffee Roasters and Custom Coffees beans from Bendigo.
1) What's your favourite autumn dish, Jack?
Jalapeno fritters; they’re on the menu.
2) What's your favourite season?
Summer. The menu changes seasonally.
3) What are the staples in your pantry now?
Haloumi, smoked salmon and sweet potato.
4) What is your earliest cooking memory?
Making Christmas biscuits with my grandparents (Dorothy and Ian Schilg) on the farm at Burrumbuttock.
5) Which ingredients do you grow yourself?
Coriander, parsley, chilli.
6) Which six people would the two of you invite to dinner?
Trent Cotchin, Kanye West, Steph Claire Smith, Michael Jordan, Jesinta Franklin and Tyler Spencer.
7) What is your favourite foodie ritual?
Going out for brunch with Georgie on a day off. Favourites are Cafe The PreVue (Wangaratta) and The Proprietor (Albury).
8) What are you bingeing on TV? If anything.
I don’t get much time for TV but when I do I watch Rick and Morty.
9) What did you have for dinner last night?
Salmon and sauteed veg
10) What are you drinking at the moment?
Almond milk cappuccino
