The new head chef at Tallangatta cafe Teddy’s Joint trains under Corey Pyle at Boss Boxing in Wodonga.
“It’s all about balance; I train to eat and eat to train,” she said.
Having grown up at Kiewa, Chapman did her chef apprenticeship on the Border before she moved to Geelong and Melbourne until about four years ago.
Three weeks ago she took up the Tallangatta post.
“It’s nice to be working back in the area,” she said.
It specialises in handmade flatbreads and pizzas.
Teddy’s Joint is open for breakfast and lunch Thursday to Sunday.
It gained a liquor licence this month.
What's your favourite winter dish?
Ham hock and veggie soup with bean mix, healthy and delicious, the kind your mum used to make.

What are the staples in your pantry now?
Rice (Arborio and brown); brown rice in winter is so healthy and wholesome, you can cook a big batch and turn it into three different dishes during the week. There is always good cheese in the fridge; I’m a double, triple cream kind of girl, if you’re going to indulge, you might as well.
What is your earliest cooking memory?
Before KFC we used to do fried chicken. Mum would put all of the kids at a different (egg, flouring, crumbing) station to make it.
Which ingredients do you grow yourself?
My partner (Jason Jones) and I are on a new property at Old Baranduda. We had a bumper tomato season and we’re playing around with a little, natural spring. We have tomato chutney in abundance but only soft herbs growing this year.
Which six people would you invite to dinner?
Marco Pierre White, Muhammad Ali, my grandfather and my three siblings because we haven’t been in the same room together for the longest time (they live on the coast).
What is your favourite foodie ritual?
I have dark chocolate every single night; the day is not complete unless I’ve done that.
What are you bingeing on TV? If anything.
There’s not much time between work and training.
What did you have for dinner last night?
Pizza – haloumi, cavolo nero and anchovies
