Wodonga TAFE commercial cookery student Chelsea McGuire said the Delicious Delights Afternoon Tea was her major assignment.
She said the planning began six months ago with prepping in the pipeline for three months.
“Some of the pastry was done three months ago for freezing down,” she said.
Highlights were gruyere cheese, sauteed mushroom and caramelised onion tartlets; smoked salmon, pink peppercorn and ricotta mini quiches; chicken, apple and poppy seed mayonnaise finger sandwiches; and lavender honey cream scones.
A third-year apprentice at Albury eatery Brick Lane, McGuire said she chose 19 sweet and savoury items.
“I really love afternoon tea and I really liked the idea of high tea,” McGuire said.
