Firefighters were called to the derelict building about 6.45pm on Wednesday.
Flames engulfed the property, which burnt to the ground.
The building, which had been used as the town’s school until about 30 years ago, had most recently been used as a community centre.
Robert Thompson was one of about 15 people who watched as the structure burnt down.
“People were very quiet and subdued,” he said.
“We were watching a piece of history just disappear.
“A lot of people would have had their first day of school there.”
Mr Thompson said the building had been condemned about six months ago and was not in use at the time of the fire.
Snowy Valleys Council mayor James Hayes said the council would ensure the site was safe.
It’s believed the building contained asbestos.
“It’s a bit of a shame,” Cr Hayes said.
“But something can rise from the ashes, I’m sure.”
Up to 20 firefighters from the CFA and RFS attended the incident.
A spokesman said the RFS was investigating the matter with police.
Flames could be seen leaping high above the building.
Mr Thompson said the fire had been “pretty intense”.
“I suspect the building was wet - it took a long time to get from one end to the other,” he said.
“It was very hot, to the point where the tin roof was actually melting.”
Mr Thompson said the building had still housed some pieces of memorabilia.
“It’s a piece of history gone,” he said.
“There’s not much history left around Jingellic.”
Meanwhile about 200 bales of hay have been destroyed during a fire at Whorouly.
About 20 to 25 firefighters were called to the hay shed fire on Baileys Lane about 4.40am on Friday.
CFA district operations officer Trevor Ebbels said it was likely the hay had been damp and spontaneously combusted.
"We ask farmers to be as vigilant with hay as they can.”
