The silver 2011 Ford Territory was taken from The Blazing Stump Hotel about 8.30pm on Friday and was found alight at Kergunyah about 10pm.
Detective Leading Senior Constable Ian Deverell said the vehicle did not appear to have been used in other offences.
“It’s unusual for a car to be stolen in such short time and burnt out,” he said.
The vehicle was destroyed on the side of the Kiewa Valley Highway by the fire.
Detective Leading Senior Constable Deverell described the theft as "brazen" given how busy the venue was.
It was unclear how many people were involved in the incident.
