Mathews has taken the Panthers to the brink of premiership success twice and is set to lead another strong assault on the flag.
Lavington lost the 2016 and 2017 grand finals by two and one goal to Yarrawonga before suffering a surprise loss to Albury in this year’s preliminary final.
Mathews spent time coaching Lavington’s lower grades before taking over the top position.
Skye Hillier will coach Lavington’s B grade while Dean Furbourough and Millie Fawcett will lead the C grade.
A grade players Sarah Senini and Kate Yensch will coach the club’s under-16s.
Meanwhile, Matt Koers will coach Myrtleford’s A and B grade sides.
Koers, who coached the Saints’ 1997, 2000 and 2003 premierships, has agreed to be at the helm for the next three seasons.
He has taken over from Bridget Flint-Chapman and Lindy Singleton.
