BEECHWORTH-based Haha vegan chef Osamu Uchino shares his food venture’s popular recipe for Okonomiyaki Pancake.
He said Japanese districts were each renowned for their own particular style of street food.
Haha Okonomiyaki Pancake
- 250g shredded cabbage
- 150g shredded broccoli
- 150g shredded cauliflower
- 50g shredded carrot
- Sweet corn
- 8 tbsp chickpea flour
- 200g water
- ½ tsp salt
Put all of the above ingredients together in a bowl and mix well.
Cook on a hot plate or in a frying pan with olive oil medium heat, about 8 to 10 minutes until well cooked.
Make the pancakes about 2-3 centimetres thick.
