Bruce Bolton, 48, allegedly tried to steal two vehicles on Friday before attacking a male driver in Coburg and taking his car.
He was arrested by police in Whorouly on Saturday.
The Melbourne man faced the Wangaratta Magistrates Court on Monday with his hands cuffed in front of him.
He did not apply for bail and the case was adjourned to the Melbourne Magistrates Court on June 25, where he is expected to appear via video link.
He has also been charged with aggravated burglary.
Solicitor Mario Vaccaro said Bolton fell from a tree while gardening two weeks ago and hit his head, and there was a need to investigate a possible link between the injury and the crimes.
"This is behaviour that is bizarre and out of character for him," he said.
"There is concern for his mental health.
"This is an incident that surprised his partner and surprised his friends."
