The Bears trailed 3-0 early in the decider before storming home to win 11-4.
It was the side's 14th premiership in the past 15 years after going down to Wangaratta in 2015.
"We had to work really hard for this one," Simmons said.
"The score wasn't a true reflection because we were behind early and had to fight really hard to get back into the game.

"Wangaratta beat us during the season and is a really good side."
Wangaratta were set alight early by batter Ross Johnston and pitcher Brian Wilson.
But North Albury bounced back with leading cricketers Greg Daniel and Ash Borella in the thick action for the competition heavyweights.
"'Jack' slapped it around everywhere," Simmons said.
"Ash Borella had a good game as well.
"We have a few cricketers in the side these days."
In B grade, Porepunkah defeated Wangaratta 10-5.
