Hunt damaged his rotator cuff in the first quarter of the game against Corowa-Rutherglen in the final round on August 24 and failed to come up for the match at Wodonga Raiders' Birallee Park.
The 39-year-old equalled Matt Allen's record of 416 games (362 Wangaratta Rovers and 54 with Corowa-Rutherglen) in round 18.
Hunt's absence is one of a number of changes for the weekend's action.
The Panthers have recalled reliable defender Jack Kirley, who suffered concussion in the opening minutes against Myrtlerford on August 17, while Tom Yensch will add some much-needed height against the Pies.
Michael Oates has been dropped from the Roos' clash.
Wangaratta has made only one change with premiership defender Ben Douthie returning after suffering a back complaint during the week, prior to last Saturday's 34-point win over Albury.
Zac Goodison, who impressed against the Tigers, makes way for the veteran.
Meanwhile, Albury has names three players for Sunday's sudden death semi-final against Myrtleford at North Albury's Bunton Park.
Alex Jones and Will McIntosh have been selected on a six-man bench, while ex-Wagga Tiger Brady Morton returns to defence.
The Tigers won't finalise their team until the final training session.
However, the Saints elected to name their side 24 hours in advance.
Veteran Brad Murray is back from suspension, while Tom McDonagh will play his first game in three weeks after suffering an ankle injury against Lavington.
The Saints claimed their first final in 13 years with a thrilling three-point win over Wodonga Raiders last Sunday.
It will be the first time Albury has contested the first semi since toppling Lavington by four points in 2012.
The Tigers have won seven of the past 10 flags, including last year's win over Wangaratta.
