The Ape Albury was rebranded as The Hyve Bar, when it moved to premises opposite Service NSW in Smollett Street in spring.
It is a continuation of their Ape theme; ape meaning bee in Italian.
Co-owners Susan and Erik Radoicic said they were happy in their new surrounds after they finished a six-week fit-out in September.
The business previously operated from their vintage blue Piaggio Apelino, which was parked on the corner of Hume and Kiewa streets.
"Since we have shelter now, we called it The Hyve," Susan said.
"Winter was hard this year; we used lots of hand and toe warmers!"
Erik said their new San Remo Cafe Racer coffee machine was a welcome addition.
He said they used beans from Vertue Coffee Roasters in Carlton.
"We've had good follows from the van; 20 per cent of our clientele is a continuation of The Ape," he said.
"We're really grateful for that."
The Hyve Bar offers jaffles, salads, baguettes and sweet treats, all made from scratch.
Their Vietnamese banh mi already has a popular following.
The Ape Albury still does wedding recovery and corporate events on weekends.

At the moment, tomatoes, rocket and a selection of herbs. Out the front of our shop we are growing rosemary.

I don't watch a lot of TV, but I do watch a lot of small videos on anything with two wheels.
What did you have for dinner last night?
Chicken, tomato and olive pasta
What are you drinking?
With my early mornings and working in a coffee shop, I drink a lot of espresso.
