Officers from the Albury Highway Patrol intercepted the BMW north of Holbrook on Saturday morning.
The police car's radar locked onto the vehicle at 210km/h in the 110km/h zone about 9.40am.
Officers spoke to the driver, a 29-year-old Sydney man, and cancelled his licence for six months.
He also received a $2482 fine for speeding more than 45km/h above the limit.
Police did not impound the Victorian-registered BMW.
"Unfortunately, police weren't able to confiscate the vehicle as the driver wasn't the owner of the car," a spokesman said.
