Emergency services had been called to the Albury Central Tourist Park on North Street about 6pm.
It's alleged West was involved in a verbal dispute with her 36-year-old partner inside a unit.
She allegedly stabbed the man and a struggle took place.
It's alleged West hit the man with the bat before fleeing in a silver Volkswagen Golf.
Paramedics were called to the caravan park and the man was treated for a stab wound to his left thigh.
He was taken to Albury Base Hospital in a stable condition.
West was arrested on nearby Eames Street and was taken back to the Albury station before being charged.
She appeared before Albury Local Court on Monday morning.
Defence Lawyer Tim Hemsley said she would be pleading not guilty to the allegations.
Mr Hemsley said that was on the basis of self-defence, with West said to have grabbed whatever item she could from the small cabin the couple were staying in as the man assaulted her.
The pair had been in a five-year relationship, which she had decided was now over.
Mr Hemsley said the argument was over money.
They took turns paying the weekly rent.
The most recent week was her turn to pay, but because she had spent $600 on a present for her stepson's 16th birthday - it was his son - she couldn't pay.
IN OTHER NEWS:
West was bailed to stay with her brother, who lives at Lismore, 170 kilometres from Melbourne.
Magistrate Richard Funston said that was probably wise as it would put plenty of distance between her and the alleged victim.
But despite bail conditions being set, West allegedly breached them by returning to the caravan park.
Police arrested the 39-year-old on North Street a short time after she was bailed from the holding cells at the Albury station.
Officers again searched her Volkswagen on the side of the road before again taking her back to the police station.
Evidence was removed from the vehicle.
It appeared to include paperwork.
West could be seen being led from her car into a police vehicle.
It's believed she will face bail breach charges and likely return to court on Tuesday.
