Mrs Betteridge, 60, died this week with her husband and former owner of Dean Street pizza shop, Sweethearts, paying tribute to her courage in battling the disease.
"We will miss her every day, from her laugh, to her Christmas over-catering and generous sized servings at the pizza shop, her Deanies in the Tarago, her lengthy icecream melting supermarket chats and her dedication to Home and Away and Princess Di," Mr Betteridge said.
"But most of all we will miss her love and care for those in our family, her friends and for others, a task to which she devoted so much of her life and energy."
Mr and Mrs Betteridge have three children, Ashlee, Bishop and Brittany.
Mr Betteridge was elected to Albury Council in 2008 and served two terms before stepping down in the lead-up to the 2016 elections.
He unsuccessfully stood for mayor in 2015.
