Gaynor and Grills, who joined the club from Wagga Tigers and Holbrook in 2018 and 2014 respectively, were elevated in a changing of the guard at the sportsground.
Albury co-coach Luke Daly said Gaynor and Grills had shown strong leadership qualities and would be aided by Daly's experience.
"We're really excited to have these three guys lead our club," Daly said.
"They are all at different stages of their playing careers.
"We believe they will complement each other perfectly and above all represent and lead our playing group and football club really well."
Gaynor and Grills played for Wagga Tigers last season after the Ovens and Murray season was abandoned due to coronavirus.
Gaynor, Grills and Daly have been among Albury's best in pre-season matches and will line-up in the season opener against Yarrawonga on Saturday.
