Elm Dining + The Yard Bright, which was formerly occupied by Simone's, was sold to Traverse Alpine Group during September.
Albury-born proprietor Rosy Seaton, who was behind the award-winning Astra Falls Creek and The Boat Shed at Lake Hume, said Elm Dining would offer a chic dining experience that reflected her passion for the region.
"For decades, 98 Gavan Street has been synonymous with Bright's food and wine culture - who will ever forget the legendary Simone's!" she said.
"The team at Elm and I are excited to continue the tradition of exceptional food, wine and service."
Elm Dining head chef Kauri Watkin, who worked at Astra Falls Creek during winter, gained his experience in regional and metropolitan Australia and Japan.
His love for local produce and seasonally-inspired cooking took root in Noosa, Queensland.

Working at the highly awarded Kaiseki Restaurant Kumahiko Arashiyama, he gained a true understanding of Japanese cooking and tradition.
"The menu at Elm has been curated with love for the local landscape," he said.
"A spring launch brings with it the opportunity to capture the bounty of produce from local surrounds, and local produce is the hero in many of our dishes.
"Creating the opportunity for guests to share wonderful food and wine set within the beautiful landscape of the Victorian High Country is an exciting prospect."
Elm is located at the former surgery and residence for the town's doctors from 1857 to 1977.
Later the cottage became Barnaby's Restaurant followed by Clovelly Cottage, Rebekka's at Bright and Simone's of Bright.
Elm Dining + The Yard Bright was renovated before reopening on October 29.
