
A WEST Albury milk bar with a solid reputation for pastries and burgers is stacking up for its new owners.
Albury chefs Matt Richter and Cody Motton took over Frankies recently from the founders, Border hospitality couple Nate and Sarah Jane Wilkins.
Richter said Frankies made the best use of their professional skill sets.
"Cody is really into the baking side of the business and I'm into the burger side of things," he said.
"Obviously, Frankies has a great reputation and it's already got a loyal following.
"Hopefully, we'll take it in the same direction but put our own spin on things too."
Richter said they planned to expand the burger range, merchandise, desserts and pastries over time.
He said his interest in Asian fare would influence the offerings.
"Frankies is a milk bar and we want to make it a one-stop shop for West Albury and even the wider region," Richter said.
"We plan to offer a range of grab and go meals too."
Having initially worked with Richter at The Bended Elbow in Albury, Motton pursued his passion for bread and pastries at Mercure Albury/Restaurant 579 on Olive.
He said he had a background in French cuisine and modern Australian fare.
"Matt and I were looking at opening something together for a while and when Frankies came on the market it was everything we wanted to do," he said.
"It's a business model that gives a lot to the customer; it's customer-based to suit their needs. This opportunity was oddly made for us!"

Richter, who is now head chef at Church St Hotel in Wodonga, said he looked forward to growing Frankies and adding staff as needed.
"In our first two weeks we've doubled the wholesale clientele," he said.
"We want to expand on the brekky offering too. We're very happy to let go of ego and run with what the customers want."
Motton said Frankies offered croissants and morning buns among its pastries, which were made on the premises.
"French style pastries are my specialty," Motton said.
"But with Matt's influences in Asian food, it definitely has the capacity to influence the pastries too."
Frankies opened in mid -2019 after an extensive renovation of Padman's Corner Takeaway.
Located at 836 Padman Drive, Frankies opens Wednesday to Sunday for breakfast and lunch with Friday and Saturday dinner service coming soon.
