The club originally booked Collingwood champion Nathan Buckley.
Buckley recently informed the club he would have to cancel attending due to personal circumstances.
The Tigers moved swiftly to find a replacement.
Ablett answered the club's SOS in an equally big as drawcard for the luncheon.
The dual Brownlow medallist was booked to speak at the Tigers' season launch in late February.
But similar to Buckley, Ablett was a late withdrawal due to personal circumstances.
The Tigers were able to secure Melbourne Storm coach Craig Bellamy at late notice who proved to be an entertaining guest.
The club has also secured Campbell Brown as MC for the luncheon.

Albury co-president Brendan Breen said the club was thrilled to add to the impressive list of guest speakers in recent years.
"We were disappointed when informed Nathan wouldn't be able to attend the function," Brown said.
"But that was soon replaced with excitement after Gary said he was happy to make the trip.
"I think Gary was disappointed he had to cancel earlier this year and felt obliged to make amends if he could."
