Meanwhile, nine new cases of the virus have been reported within the Murrumbidgee Local Health District (MLHD).
NSW Health reported three deaths associated with the virus on Saturday, including a woman in her 70s from the Riverina who died at Albury Base Hospital.
She had received two doses of a COVID-19 vaccine and had underlying health conditions.
"NSW Health expresses its sincere condolences to their loved ones," a spokesperson said.
Since July 1, there has now been 15 deaths across the MLHD associated with COVID-19. The last death was reported on November 19 involving a man in his 80s who also passed away at Albury Base Hospital.
A breakdown of Saturday's nine MLHD cases by local government area is not currently available, with the health district moving away from daily reports to weekly updates.
It is the second consecutive day with more than 500 cases across the state, with the daily tally continuing to surge.
Health authorities are concerned festive season celebrations are driving the spike in cases, and are urging caution.
"The transmission in these types of settings is contributing to the increase in cases in NSW," Dr Jeremy McAnulty said on Friday.
There are now 45 cases of COVID with the Omicron variant in NSW. To date, no Omicron cases have been admitted to hospital.
There are currently 150 COVID cases in hospital across the state, with 25 in intensive care and and eight requiring ventilation.
93.1 per cent of people aged 16 and over in NSW are fully vaccinated, and 77.6 per cent of those aged 12 to 15 are double-dosed.
The community is encouraged to keep coming forward for COVID-19 testing and vaccination.
Vaccinations can be booked at more than 100 providers across the Riverina by using healthdirect.gov.au.
Symptoms of COVID-19 include fever, sore throat, cough, headache, runny nose, shortness of breath, fatigue, muscle aches or pains, and a change in taste or smell.
