Acting Superintendent Andrew Spliet said police would allege a pocket knife was used in the twin attacks which left the father with stab wounds to his abdomen and internal bleeding.
"They received significant injuries as a result of the stabbing," he said.
"The 42-year-old being treated at a Melbourne hospital is currently in an induced coma as a result of his injuries.
"The 19-year-old received a number of slash wounds and stab wounds and was treated with up to 20 stitches.
"He has since been released from hospital.
"It was a fairly savage attack and police have spoken to a number of people who were witness to the event."
Superintendent Spliet said the parties were not known to each other, and high levels of alcohol and intoxication and possibly other substances were factors.
It was also confirmed security guards working outside of Beer Deluxe hotel assisted with treatment of the two victims before police and ambulance and established a crime scene.
"It is a timely message for people who are out, especially around the festive season, don't drink to excess, know your limits," he said.
"If you are going to interfere with other people's health and safety when you are out and about then expect to be dealt with by the police."
The stabbings took place near the entrance to West End Plaza shopping centre.
