Emergency services were called to the gorge about 5.30pm on Sunday.
Leading Senior Constable Rowan Waite said the 20-year-old Melbourne man had to be winched from the scene by helicopter.
"He was spending part of Australia Day at Spring Creek at the gorge," he said.
"He fell about five metres into a rock pool.
"He hit his head and was unconscious for a very short time.
"The man's friend pulled him out of the water."
The 20-year-old had a range of injuries, including a fracture in his skull, a collapsed lung, broken teeth, and damage to his eye socket.

"Paramedics attended and assessed him, and required him to be airlifted to the Royal Melbourne Hospital," Leading Senior Constable Waite said.
"He was winched out by helicopter.
"The injuries are not life threatening."
An Ambulance Victoria spokeswoman said the man was in a serious condition.
"He had lacerations to his head, face and hands, and a possible neck injury," she said.
"It happens too frequently," Leading Senior Constable Waite said.
"People have got to be aware, whether they're at Woolshed Falls or the gorge area, the rocks are slippery whether they're wet or not."
