Beechworth fine dining establishment Provenance turned to a wine bar format in January to survive the tourism fallout from the summer bushfire crisis.
Owner and executive chef Michael Ryan had just helped lock in the Swings and Roundabouts festival - a series of dinners and masterclasses at Beechworth to aid bushfire recovery - when COVID-19 forced hospitality trading bans.

Described by Ryan as a random collection of the farmed, foraged and the fortuitous, the shop offers sugo, yuzu kosho, preserved pine mushrooms, pickled eggplant, muesli, wine and pre-batch cocktails.
