The victims, aged 19 and 42, went to nearby Paddy's after the incident and sought help.
The father was taken to a hospital in Melbourne for treatment while his son was treated in Albury.
Miller was arrested at an Albury home two days after the altercation and has remained in custody since.
He made his first bail application on six charges in Albury Local Court on Tuesday.
IN OTHER NEWS:
Magistrate Richard Funston appeared concerned by the nature of accusations, involving a melee in the streets.
The wound to one victim was so deep, he said, there was a high risk of death.
"The allegations are so serious," he said.
The court heard Miller - also known as Christopher Farrell - was on a corrections order at the time.
His second child was recently born while he was in custody, with his partner and the baby in court to support the 24-year-old.
Lawyer Bronte Winn said there were elements of self-defence in the matter.
She told Mr Funston her client could live with his partner at a home on Captain Cook Drive and be on a 24-hour curfew, with a requirement he not take drugs or alcohol.
The court heard there were co-accused in the matter, but it was unclear if they had been bailed.
Mr Funston denied Miller's application and he will return to court on June 30.
