From Tuesday, the six-day festival will display artworks from the collection of the Istituta Cultura Sicilia Australia.
Internationally-exhibited artist and Palm Island elder, Doolan was invited to Sicily and commissioned by the institute's president, Maria Sanciolo-Bell, to produce a series of paintings of significance to Sicily.
The collection of eight paintings titled Sicilian Dreaming, which toured Sicily and Italy from 2012, was deemed the most successful overseas tour for an Aboriginal artist.
The collection will be on show throughout La Fiera.
La Fiera spokesman John Costenaro said Myrtleford would host the region's premier Italian festival for the 11th year.
"La Fiera is proud to once again develop a program of events that will delight everyone and each year our festival grows and becomes more exciting," he said.
"We have a wonderful range of entertainment.
"La Fiera is becoming the one event in the North East not to be missed!"

The festival launch party, Celebrazione Michelini, runs on Tuesday.
Viva Michelini Italian Food and wine will be available daily at Michelini Wines cellar door.
On Saturday Myrtleford's Piazza will come alive with an Italian village atmosphere.
The festival presents the Food and Wine Festa with a series of masterclasses.
Among highlights will be grape stomping, barista racing, Anthony De Masi presenting Magic Tony and Luigi Zucchini for the children, wild mushroom forages and an Italian street procession.
Children's activities include the children's activity hub in the newly-redesigned Jubilee Park with free face-painting, balloon animals and Caroline's free photo booth.
