Pinchos Catering and Andiamo Street Food offer authentic Sicilian and South American street food from their converted shipping container in Junction Place in the CBD.
Think Semolina Gnocchi Alla Romana with Bolognese Ragu and Parmesan Crust, Cuban Pork Sandwich DIY Slider Kit or Eggplant Parmigiana. Top it off with a Vanilla Malt Milkshake Celebration Cake.
Pinchos Catering and Andiamo Street Food co-owner Farrah Reid said they had weathered the COVID-19 storm, which closed much of the hospitality sector during late March.
Reid said they had retained their full-time staff and gained new clients.
"We already had a business set up for takeaway and we had some people come to us for the first time," she said.
Pinchos Catering and Andiamo Street Food began offering Pinchos At Home via online platform Cookaborough during May.
IN OTHER FOODIE NEWS:
Co-owner and head chef Andrea Burgio, who was born in Milan to a Sicilian family, earned his stripes at Pascoli in Milan and Four Seasons Hotels throughout Europe.
Later he worked at dining icon Grossi Florentino in Melbourne before settling in the North East.
With Reid in the front of house complementing Burgio's skill in the kitchen, the duo initially focused on Sicilian-style rustic fare using traditional family recipes before branching out into Spanish, Brazilian, Middle Eastern and Greek street food.
Having researched their dishes during trips in the northern hemisphere summer, Reid said luckily they hadn't made any travel plans this year amid the COVID-19 pandemic.
"Andrea will be desperate to get back to see his family," she said.
"They live in Milan, where it's been really affected; they've been in lockdown much longer than us.
"On the positive side, I used to work six days a week and do book work on Sundays and now I'm having two days off. People are doing things a bit differently and spending more time with their families, which has been nice."
Orders via Cookaborough open on Monday at noon before closing on Thursday at noon, ready for pickup from Andiamo Street Food on Friday or Saturday.
