The pair are moving interstate for work opportunities and will play their football in the Tasmanian State League from next season.
Dale kicked 89 goals in his last two seasons with the Saints, including 59 in 2019 to land the Doug Strang medal as well as being named Myrtleford's best-and-fairest that year.
He followed in the footsteps of his brother, Frazer, who topped the Saints' count two years earlier.
The small forward leaves Myrtleford with more than 150 senior goals to his name.
He started the year with a six-goal haul against North Albury and was among Myrtleford's best players in eight of their 13 matches.
Quirk, meanwhile, played six senior games and five in the reserves this season.
He racked up 81 senior appearances between 2014 and 2021 and, at 196cm, will give his new club an option up forward or in the ruck.

"Lachie had aspirations of playing state league footy and that was always on the cards and something that was talked about last year," Myrtleford co-coach Jake Sharp said.
"Luke's good mates with Lachie and it's more of a lifestyle choice for him.
"It's bittersweet. You want to keep your gun players around but these two boys are going on to a fantastic opportunity and they go with our blessing.
"We hope they go down there and forge really successful careers for North Hobart and experience what state league footy in Tassie has to offer.
"People always leave sides but what that does it create opportunities for others to stand up.
"We look at our list this year and Declan Bren started to show glimpses of some big growth but there's plenty of players, we believe, can fill the role.
"Hopefully we bolster some of our midfield depth and that'll send a few of our dangerous midfielders forward."
North Hobart confirmed the signings in a statement on Sunday.
"Lachie and Luke have played some fine football in the Ovens and Murray league with Myrtleford and we look forward to welcoming them to North Hobart when the borders re-open," it said.
Myrtleford sat fourth in the O and M when the season was cancelled.
North Hobart finished bottom of the TSL in 2021.
